What is Sushi?

Some think it is raw fish.

But, "sushi" really means vinegared rice. Quality and proper preparation are the key to sushi. If the rice is bad, the whole dish is bad.

The fish used MUST be fresh. It's very hard to get really fresh fish unless you or your sushi restaurants are buying off the boat. There's nothing like eating fish from a market or sushi counter right outside Tsukiji Market in Tokyo.
